These crispy little cookies are so simple and quick to put together. They make the perfect after-school treat or great with a cup of coffee.
Ingredients
225g room temperature butter
225g caster sugar
1 free range egg
1 tsp vanilla extract
250g plain flour
1/2 tsp baking powder
125g chocolate drops
125g roast hazelnuts
Method

In a freestanding electric mixer on a medium speed - beat together the butter, sugar, egg, and vanilla, until it is creamy and light in color

Turn the mixer down - slowly add all the dry ingredients - flour, baking powder, chocolate drops, and hazelnuts

Mix until the dough comes together - it will only take a minute

Turn the dough out onto a length of baking parchment and roll into a sausage shape approx 5cm in diameter.

Wrap up in the paper and refrigerate for about an hour

Preheat oven to 180c

Slice cookie dough 1 cm thick and place them on a lined baking sheet leaving enough space around them & bake for 15-18 min until golden.

Cool on a wire rack and enjoy!
