Kate's Overnight Oats with Chia Jam

These are always so popular in the shop every morning. Super filling way to start the day or as a snack along the way. As the name suggests these can be made the night before and assembled in the morning. The jam is delicious on toast, scones, porridge you name it! 

Ingredients

300g berries of your choice fresh or frozen

2 tbsp chia seeds (True Naturals)

2 tbsp maple syrup (Shady Maple) and extra for topping

4 cups rolled oats (Killbeggan)

3 cups your favourite almond milk

1 tsp vanilla extract

Pinch of salt 

Flaked almonds  

 

Method Jam

  1. In a small saucepan add your berries and gently heat until the berries start to soften down into a puree. 5-7 min approx, more if berries are frozen. 
  2. Take off the heat and add in your maple syrup - at this stage we like to puree the berries fully with a hand blender but you can leave with lumps in it if you like.
  3. Stir in your chia seeds, these will swell up and thicken your jam overnight. 
  4. Leave in the fridge. 

Method Oats 

  1. This recipe makes enough for 4/5 portions so ideally make in a tub that has a lid and can be kept in the fridge 
  2. Add oats, vanilla, salt, and almond milk together and stir. Should resemble wallpaper paste! It will thicken up overnight 
  3. Leave in the fridge.

In the morning assemble your oats, chia jam, flaked almonds and a drizzle of maple syrup for a satisfying breakfast. We also add Greek-style yogurt on the side but feel free to add any of your favorite toppings. Enjoy !
