Description

Wild blackberries were harvested along the north Mayo coastline in 2011 & used to ferment & create  a wild blackberry vinegar then a blackberry balsamic. This won the Blas na hEireann silver medal in 2014, coming second only to our gold medal heather balsamic. The yhave decided to set 6 barrels aside  for aging for a further 5 years. The aging created their 5 year aged blackberry balsamic. 3 barrels were set aide for another 5 years. Since then they have set aside half of their barrels for aging. This bottle is from the award winning casks of 2014 & bottled in 2025.
