Ground bay leaves have a strong, spicy flavour with a tart, peppery aroma. Bay leaves have been used around the world for centuries and were first grown in the Mediterranean. The powder is often used to flavour tomato-based dishes and custards.
Additionally, with a more concentrated flavour compared to whole bay leaves, you may have noticed they’re a common ingredient in many other spice blends such as garam masala and some curry powders. Ground bay leaves a rich source of vitamins and minerals, including vitamin C, vitamin A, and iron and can even be used as an insect repellent, thanks to their strong aroma.
