Summa Vital Wheat Gluten is an ideal ingredient for bread making. To help the bread to rise and improve texture and elasticity add 1 tablespoon per cup of flour in recipes.
Vital wheat gluten provides the extra gluten that whole-grain loaves need to rise their highest. It's particularly helpful in loaves that use low-gluten or whole grain flours, such as rye, oat, teff, spelt, or buckwheat.
Alternatively to make 'gluten steaks' a meat alternative often referred to as seitan, mix the gluten flour (1 cup) with cold water (3/4 cup), knead well then cut the dough into slices and boil in your favourite broth for approx. one hour.
