Ummera | Irish Smoked Chicken
Ummera Smoked Chickens have been enjoyed for many years now. Crown of Irish Chicken, cured overnight in a brine of pure sea salt with a sprinkle of organic raw cane sugar, and then cooked and smoked over glowing oak sawdust fires.
Delicious to eat just as it is, slice thinly and serve in a salad or in a sandwich. Be creative and add it to pasta, a white sauce and some smokey bacon.

I was pleasantly surprised. Expected a slightly ‘petrolly’ taste, but it was pure ‘chickenny’; delighted. I only used it cold, in sandwiches and salads, where it was really smashing. Next time I’ll try it cooked, in a sauce.
(A godsend while I was without a working fridge recently.)
