Oranessence | Tonka Bean

The Tonka bean is the seed contained in the fruit of the Brazilian Teak, a tree that can reach 30m in height, and grows in the Caribbean and South America. The seeds are harvested after the fruits dry, which are not picked but fall naturally from the tree when ripe.

Rich in coumarin, it is this substance that partly gives it its captivating vanilla and bitter almond scent. However, it must be used sparingly due to its aromatic potency and also because coumarin can be toxic in high doses. Grated, it flavours creams and pairs wonderfully with chocolate, fruits, maple syrup, sweet potato, and pumpkin.
