
Oranessence | Naga Bhut Jolokia Explosive
Also known as "ghost pepper," the Naga Jolokia is one of the hottest peppers in the world, but also one of the most flavourful. Its taste is similar to the habanero pepper with slightly smoky notes.
Usage: It is best used dried in dishes that allow it to rehydrate gradually: stews, sauces, soups, oils... We recommend using an infuser (e.g., tea ball) to prevent the pepper from getting lost in the preparation. To remove it at the right time, taste your dish regularly.
For a milder heat, add it in the last 15 minutes of cooking. Conversely, if you want to enjoy its full strength, you can add it from the beginning. Ideally, dose by a quarter of a pepper until you achieve the desired strength.

The sensation of hotness depends on each person's sensitivity. Therefore, it isn't easy to rely on the Scoville scale. Also, a chilli pepper will have a different heat from one plantation to another, depending on the soil that nourished it, but also from one seed to another, even if it is picked from the same branch.
